You are right that Windows 10 will try to update you (you get forced) but in the Pro 64 bit version you can go into Advanced update Options and turn off Major Feature update. Thanks for your response and all others who have given me their experience on this so far. My own choice has been to NOT be connected to internet with editor, and NOT use CC.
